Vegan Shepherd’s Pie / Veganer Shepherd’s Pie

Before winter is over…

As you know my love for comforting dishes is endless and so I figured I have to serve you my favorite vegan and gluten free recipe before winter is over.

Originally the British shepherd’s pie is made with ground beef but I figured there must be a way to make this healthy and delicious! The flavors of this recipe are amazing, personally I cook this in a big cast iron pan but I am sure the recipe works with a normal pan as well.

Serve it either in four single serve baking dishes or bake it in one big baking dish. I like to use the single serve dishes just presentation wise. I arrange them on a big wooden tray with a small side salad. Guests love it!

Superfood Smoothie

Superfood, what is that?

We didn’t have a smoothie for a while and because of that I decided to serve you a real superfood treat this week!

I get a lot of questions about superfoods lately, be assured that I try to incorporate superfoods into all my recipes. The term ‘superfood’ however is a made up term by the marketing industry and it seems as though a lot of foods are being considered a superfood by now. In my book a superfood is mostly raw but more importantly vegan. If I get asked the foods coming to my mind are:

 Spirulina and Chlorella
Quinoa and Amaranth
Chia, Flax and Hemp seed
 Goji Berries
 Raw Sauerkraut
 Raw Cacao
 Beet greens, leaf lettuce, spinach, kale
 Broccoli, brussel sprouts

Quinoa Burger

A healthy Burger, it’s possible!

A nice juicy burger! Doesn’t get much better than this, right? But wait, it does get better because this one is juicy, gluten free, meat free and with this basically guilt-free!

I was never a big fan of veggie burgers, I found them to be either too dry or too moist. To me a burger patty has to be crispy on the outside and juicy in the inside. I know how hard it is to stick to the clean lifestyle and to say no to a ‘real’ burger but little treats like this one makes it so much easier! (I hope)

I recommend the Canyon Gluten Free Buns, they are seriously yummy and not the average dry gluten free bun! Add whatever ingredients you like, personally I add Avocado, little mayo, organic Ketchup (what are GMOs), red onions, lettuce and tomatoes. For a super healthy, low calorie burger, leave the buns, mayo and ketchup out and enjoy with a small salad instead.

If you are not familiar with Overnight Oats, then this article will simplify your breakfast life, I promise! 

This is such an easy, healthy and delicious breakfast that does not include cooking or washing dishes except for one jar!

Personally I prepare this jar of deliciousness the night before and I grab it form the fridge the next morning.
This is a very filling breakfast so I usually enjoy it half an hour after my green smoothie and after an exhausting workout.

Oh my Coconut Whipped Cream!

I am so happy to share this dessert with you! If you are anything like me, you dig some good whipped cream! I have been doing the whipped cream this way for a while now, but after posting a smoothie picture on Facebook last week, I realized that some of you never heard about this kind of whipped cream! 

Controversy around Coconut Milk
There is a bit of a controversy around coconut milk! Some scientist say it lowers cholesterol and some are not so convinced. Coconut Milk has however for sure zero Cholesterol compared to cow milk. The ‘problem’ lays in the saturated fats of coconut milk, we talked about saturated fats a while back. Saturated fats are a rich source of medium-chain fatty acids (short MCT’s). MCT’s are well soluble in water. From the start they are basically on a fast track to your liver where they are transformed into energy for your brain, heart and liver also known as ketone bodies.
Although Coconut Milk is high in (saturated) fat, it’s very well absorbed by your body.

There is not one week without me eating Quinoa. It’s not like I love the taste so much but I truly love what it does to my body!

Quinoa is a crop harvested in South America and is considered a superfood and 2013 was officially voted “International Year of Quinoa” by the United Nations General Assembly.
Because of all the amazing health benefits the NASA is considering the crop for long-duration human occupied space flights and every single dietitians or nutrition scientists I know, is raving about it! (1)
